We are a mostly dairy-free household these days, since we’ve discovered that Gerry is lactose-intolerant.  Oh sure, he’ll binge on cheese like Saturday night, but it’s really not good for him. And more and more, it’s not good for me either. Sometimes Chinatown simply isn’t close enough.  Especially when there’s freezing rain out there and I’m hungry!  So I had to make my own Pho and it ROCKED!    Of course, even though it’s my recipe, I didn’t follow it to the letter.  I had caramelized onions & mushrooms left over from the day before, so my soup had a couple of mushrooms in it too.  And those big white chunks you see in the photo to the right?  Those are garlic.
