Dinner’s in The Fire #lovecdnbeef
Cool day today, which means a fire all day. Perfect for braising that chunk
of beef we picked up on my way home to the island.
Right in the coals and dinner will have that added smokiness.
Now it’s all about patience.
This was a modified version of Matt’s Honey Braised Short Ribs, but I used a cheap pot roast cut, used dad’s dark ale for 50% of the braising liquid and added a small nob of ginger. The smokiness came automatically from the fire.
It was very good, but too dark to photograph the end product without blinding everyone with a flash. Which in a house lit by candles and small LEDs is just cruel.
