Happy Ground Hog Day
May our winter be fun, temperate and short; our summers fun, leisurely and long; with the beauty and joys of spring and fall tucked in between to easy us into the season changes.
In celebration of the day, I tried (and failed) to find my recipe for Nam Prik Ong – a tasty Thai meat sauce eaten on rice that is made from tomatos, chiles, and minced pork aka ground hog.
Not an official mascot, but certainly comfortable on campus. I saw this guy rooting around completely oblivious to passing students.
